What defines the Levantine’s region* is the complexity of its heritage and its diversity. Dishes that are similar or even identical cross borders, shared from one country to another yet prepared with unique touches. These shared culinary traditions can serve as the foundation for this workshop.
This session will focus on chickpeas — a cornerstone of Levantine cuisine — celebrated for their versatility and ability to transform entirely depending on how they are prepared. From hummus to falafel, stews to salads, chickpeas carry stories, migrations, and memories in every bite.
In this intimate workshop, a group will gather to cook together and reflect on the chosen ingredient and the dishes it inspires. Through the act of cooking and sharing food, we’ll explore the journeys, cultural uses, and rich narratives carried by chickpeas — an ingredient that has shaped our collective palate and continues to connect communities across generations and geographies.
